Cajun Mahi Mahi with Roasted Vegetables

Ingredients
- 2 lb mahi mahi fillets
- 1 tbsp Cajun seasoning
- 1 tsp smoked paprika
- 1 tsp salt
- 2 tsp olive oil
- 1 large zucchini, diced
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1 cup chopped spinach
- 1 tbsp lemon juice
Instructions
- Toss vegetables with half the oil and half the seasoning. Roast at 425 F for 15 minutes.
- Season fish with remaining oil and spices. Roast on the same pan 8 to 10 minutes until flaky.
- Spritz with lemon. Divide into 5 portions. Cool, then freeze.
