Cajun Mahi Mahi with Roasted Vegetables

Instructions

  1. Toss vegetables with half the oil and half the seasoning. Roast at 425 F for 15 minutes.
  2. Season fish with remaining oil and spices. Roast on the same pan 8 to 10 minutes until flaky.
  3. Spritz with lemon. Divide into 5 portions. Cool, then freeze.
